White Fish Poached In Coconut Cream

- 1 (13.5 oz) can coconut cream
- 1 None lemon, zested and juiced
- 1 tbsp fish sauce
- 1 tbsp brown sugar
- 2 tsp sambal oelek (chili paste)
- 1 clove garlic, minced
- 4 (4.25 oz) firm white fish fillets
- 2 cups baby spinach
- None None steamed rice, to serve
- None None shredded spring onion, to serve
- None None sliced chili, to serve
Directions

1In a large frying pan, combine coconut cream, lemon zest, lemon juice, fish sauce, brown sugar, sambal oelek and garlic. Bring to a boil, stirring. Reduce heat, add fish fillets and simmer, covered, for 8-10 mins, until fish flakes easily when tested with a fork. Remove fish from pan and add spinach.

2Serve fish over steamed rice. Drizzle with sauce and top with shredded onion and chili.
