  • 1 (8 oz.) pkg. dried apricots, cut in half (about 2 c.)
  • 1 c. whole red candied cherries
  • 1/2 c. whole green candied cherries
  • 1/2 lb. red candied pineapple, cut into eighths
  • 1/2 lb. white candied pineapple, cut into eighths
  • 1 1/2 c. whole pecan halves
  • 2 1/2 c. flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 c. butter or margarine
  • 1 c. sugar
  • 2 tsp. vanilla
  • 1 Tbsp. grated lemon or orange rind
  • 4 eggs
  • 1/2 c. milk
  • assorted candied fruit (for garnish)

    Combine fruits and nuts.

    Sift together the flour, baking powder and salt.

    Cream butter well.

    Add sugar gradually; cream well.

    Beat in vanilla and citrus rind.

    Add eggs, one at a time; beat well after each addition.

    Add 1/4 of dry ingredients and milk to creamed mixture.

    Continue procedure; beat well after each addition.
