  • 1 c. shortening
  • 2/3 c. sugar
  • 2 eggs plus 2 yolks, beaten
  • 1 Tbsp. orange
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 2 tsp. baking powder
  • 2 1/2 c. flour
  • 1 c. seedless raisins
  • 1/2 c. chopped candied fruit
  • 1/2 c. walnuts, chopped
  • 1/2 c. pineapple juice

Directions

    Cream shortening and sugar; add beaten eggs.

    Add juices and sifted dry ingredients.

    Mix well.

    Stir in candied fruit, nuts and pineapple, mixing thoroughly.

    Bake in a large pan at 300° for 1 1/2 hours until done.
