White Fruit Cake

- 1 c. butter
- 2 1/4 c. white sugar
- 6 eggs
- 1 (1 oz.) bottle brandy flavoring
- 4 c. flour
- 1/2 c. flour for fruit and nuts
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1 1/2 tsp. cinnamon
- 1 tsp. nutmeg
- 1 qt. pecans, chopped
- 1 box white raisins
- 1 lb. candied cherries (red and green)
- 1 lb. candied pineapple, cut up
Directions

1Sift together all dry ingredients.

2Cream butter and sugar. Add eggs, one at a time.

3Mix in flavoring.

4Add dry ingredients. Fold in fruit and nuts.

5Bake in tube pan at 325° or less for about 4 hours or until a toothpick comes out clean.
