White Fruit Cake

- 1 1/2 c. butter
- 2 c. sugar
- 6 eggs
- 1 tsp. baking powder
- 2 tsp. vanilla
- 1/2 c. orange juice
- 4 c. sifted flour
- 3 or 4 c. pecans
- 1 lb. candied cherries
- 1 lb. candied pineapple
Directions

1Cream butter and sugar.

2Add eggs, one at a time.

3Mix 3 1/2 cups flour with baking powder and add alternately with orange juice to butter.

4Combine candied cherries and candied pineapple.

5Sift remaining 1/2 cup flour over fruit that has been cut in large pieces.

6Add vanilla, 3 or 4 cups pecans and fruit to batter.

7Put in tube pan with greased paper bottom.

8Bake 2 hours in slow oven. Yield:

95 pound cake.
