White Potato Pie

- 3 1/2 c. cooked white potatoes, mashed
- 3 c. evaporated milk
- 2 c. sugar
- 1 tsp. salt
- 1 tsp. vanilla
- 1 tsp. lemon juice
- 1/4 tsp. nutmeg
- 4 eggs, separated
- 1/2 c. butter
- 2 (9-inch) unbaked pastry shells
Directions

1Cook potatoes in boiling salted water.

2Whip the potatoes.

3Add butter, salt, sugar, vanilla, juice, nutmeg, egg yolks and milk. Blend well.

4Beat egg whites until stiff and fold into potato mixture.

5Pour equal amounts into pastry shells and bake 45 minutes at 350° or until toothpick stuck in center comes out clean.

6If they brown too quickly, put a sheet of tinfoil over the pies during the last few minutes of baking.
