- 1 1/2 oz. butter or margarine
- 1 1/2 oz. plain flour
- 1 pt. white stock or water
Directions

1Melt fat over moderate heat.

2Stir in flour and cook without browning until it is pale yellow.

3Gradually stir in the liquid. To avoid lumps, use a whisk and cold liquid.

4Boil after each addition of liquid.

5When all liquid is added, cook sauce 10 minutes over low heat before adding seasoning.
