  • 1 cup milk
  • 1 teaspoon white vinegar
  • 1/4 cup oatmeal
  • 1/3 cup whole wheat flour
  • 1/3 cup white flour
  • 1/8 cup cornmeal
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 pinch salt
  • 1/2 teaspoon ground cinnamon
  • 1 beaten egg
  • 1/8 cup sugar mascabado, may substitute dark brown sugar
  • 1/2 tablespoon canola oil
  • 1 teaspoon vanilla

Directions

    Mix the milk with the vinegar and set aside for 15 minutes. Add the oatmeal and set aside for 15 more minutes.

    Mix the flours, cornmeal, baking powder, baking soda, salt, and cinnamon in a separate bowl.

    Mix the egg, sugar, oil, and vanilla into the oatmeal mixture. Add to the dry ingredients, mixing slightly to incorporate.

    Heat the waffle iron and pour in a ladleful of batter and allow to cook through. Time will vary according to the particular waffle iron being used.
