  • 3 scallions trimmed and finely chopped
  • 4 tablespoons vegetable oil
  • 2 tablespoons finely chopped fresh parsley
  • 1 tablespoon fresh ginger grated
  • 1 tablespoon jerk seasoning blend
  • 1 tablespoon minced garlic
  • 1 lime zested juiced
  • 1 whole chicken and roasting, about 6 lbs

    Heat oven to 350°F. In small bowl, combine scallions, vegetable oil, parsley, ginger, seasoning blend, garlic, 1 tablespoon lime juice and 1/2 tbsp lime zest.

    Rub half of the herb seasoning mixture under the skin of the chicken. Spread remaining herb mixture evenly over chicken. Place chicken on rack set in roasting pan. Using kitchen twine, tie together chicken legs.

    Roast chicken for 1 hour and 45 mins or until thermometer inserted in thigh, not touching bone, reads 170° F. Wait for 20 minutes before carving.
