Ingredients
- 3/4 cup caster sugar
- 4 tablespoons light margarine
- 3/4 cup boiling water
- 1 1/4 cups self raising flour
- 1/2 teaspoon bicarbonate of soda
- 1/4 cup cocoa
- 2 egg whites
- cooking spray
- ICING
- 3/4 cup icing sugar
- 1 tablespoon cocoa
- 1 - 1 1/2 tablespoon skim milk
Directions

1In a medium mixing bowl completely dissolve the sugar and margerine in boiling water.

2Sift in the combined flour, bicarbonate of soda and cocoa powder.

3Mix using an electric beater for 1minute.

4Add egg whites and beat for another 30 seconds.

5Using a metal ringed cake tin (6 cup capacity) coated with cooking spray,

6pour in the cake mix.

7Bake in the oven at 180 degrees for approximately 30mins.

8Once the cake has cooled place all icing ingredients into a small mixing bowl and combine well.

9Spread icing evenly over top.
