Ingredients

  • 3 lbs roast (I've used everything under the sun including game)
  • 1 large onion
  • 2 bell peppers
  • 3 garlic cloves
  • 3 hot red peppers
  • 1 (28 ounce) canof pre cut tomatoes
  • 2 (15 ounce) cans tomato sauce
  • 2 teaspoons ground cumin
  • 1 teaspoon paprika
  • 3 teaspoons chili powder
  • 1 teaspoon oregano
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 30 ounces kidney beans (drained don't rinse)
  • 1 tablespoon Worcestershire sauce
  • 2 cups water
  • cheddar cheese
  • sour cream

Directions

    Cube roast into small pieces, place in a bowl and add powdered garlic and onion powder.

    Chop onions and peppers.

    Chop hot peppers and set aside.

    Add meat to a hot skillet and saute until almost done, add onion and bell peppers.

    Let cook until onions start to appear translucent.

    In a large pot, add remaining ingredients and bring to a boil.

    Reduce heat and add meat, onions and bell peppers.

    Bring chili to a rolling boil uncovered until the desired consistency is reached.

    Cover and let simmer for 3-4 hours stirring occasionally.

    Use cheese and sour cream as desired to garnish when serving.
