  • 2 c. ripe elderberries
  • 1 c. sugar
  • 2 Tbsp. instant tapioca
  • 1 tsp. lemon flavoring
  • 1/4 tsp. salt
  • 1 c. sour cream
  • 1 double pie crust

Directions

    Mix berries, sugar, salt, tapioca and lemon flavoring.

    Fold in sour cream.

    Pour into pastry-lined 9-inch pan and cover with top crust.

    Cut vents in top crust.

    Bake in preheated 425° oven for 10 minutes.

    Reduce heat to 350° and continue baking until fruit bubbles through air vents and crust is lightly browned.
