- 1 c. rice, uncooked
- 1 c. American cheese, diced
- 1 c. tomatoes
- 1/4 c. oil
- salt and pepper to taste
- 1 c. mushrooms
- 1 c. ripe olives, sliced
- 1/2 c. chopped onions
- 1 1/2 c. boiling liquid
Directions

1Rinse rice; drain well.

2Drain tomatoes, mushrooms and olives and save juices to use for 1 1/2 cups boiling liquid needed.

3Add all ingredients; mix well. Place in 2-quart casserole with a lid (spray with oil first).

4Bake at 375° for 1 1/2 hours.

5Keep covered or it will be too dry.
