- 1 c. uncooked wild rice
- 2 c. diced cooked chicken
- 1 to 1 1/2 c. halved green grapes
- 1 c. sliced water chestnuts, drained
- 3/4 c. light mayonnaise
- 1 c. cashews (optional)
- lettuce leaves
Directions

1Cook rice according to package directions.

2Drain well.

3Cool to room temperature.

4In a large bowl, combine chicken, grapes, water chestnuts and mayonnaise.

5Toss gently and chill.

6Just before serving, add cashews, if desired.

7Serve on lettuce leaves. Serves 6.
