Wild Rice Salad With Cannellini Beans

  • 1 pound wild rice - uncooked
  • 3 cloves garlic - sliced thin
  • 2 fresh cilantro healthy handfuls of, - chopped
  • 3 stalks celery - chopped
  • 1 jalapeno - chopped with seeds
  • 29 ounces cannellini beans can of, - drained and rinsed
  • 1/2 juice lemon
  • 1 juice lime
  • 1/4 cup rice wine vinegar
  • 1/4 cup olive oil
  • 1 tablespoon honey
  • 1 dash cinnamon
  • 1 dash sea salt
  • 1 dash fresh ground black pepper

Directions

    Cook the rice as directed on package or in a rice cooker.

    Place rice in a large bowl and add the garlic, cilantro, celery, Jalapeno and the cannellini beans and toss.

    Prepare the dressing, pour over the salad and toss.

    Place in the refrigerator until ready to use.
