Wild Rice Soup

Ingredients
- 6 Tbsp. butter
- 1 Tbsp. minced onion
- 1/2 c. flour
- 3 c. chicken broth
- 2 c. cooked wild rice
- 1/3 c. minced ham
- 1/2 c. grated carrots
- 3 Tbsp. slivered almonds
- 1/2 tsp. salt
- 1 c. half and half
- 2 Tbsp. dry sherry (optional)
- snipped parsley or chives
Directions

1Melt butter in saucepan.

2Saute onion until tender.

3Blend in flour and chicken broth.

4Cook over medium heat, stirring constantly, until mixture comes to a boil.

5Boil 1 minute.

6Stir in rice, ham, carrots, almonds and salt.

7Simmer 5 minutes.

8Blend in half and half and sherry.

9Serve warm, garnishing with parsley or chives.
