  • 1 medium onion, thinly sliced
  • 4 oz. fresh mushrooms, chopped
  • 3 Tbsp. butter
  • 1/4 c. flour
  • 4 c. chicken broth
  • 1 to 2 c. cooked wild rice
  • 1 c. half and half cream
  • 1 c. chicken or 1/2 c. ham cubes

    Cut sliced onion into quarters.

    Cook onion and mushrooms in butter until onion is transparent.

    Add flour and stir until blended.

    Slowly add chicken broth and cook 10 minutes, stirring until smooth.

    Add wild rice, cream and meat, stirring until heated thoroughly.

    Can be frozen.
