Wild Rice Soup

- 1 medium onion, thinly sliced
- 4 oz. fresh mushrooms, chopped
- 3 Tbsp. butter
- 1/4 c. flour
- 4 c. chicken broth
- 1 to 2 c. cooked wild rice
- 1 c. half and half cream
- 1 c. chicken or 1/2 c. ham cubes
Directions

1Cut sliced onion into quarters.

2Cook onion and mushrooms in butter until onion is transparent.

3Add flour and stir until blended.

4Slowly add chicken broth and cook 10 minutes, stirring until smooth.

5Add wild rice, cream and meat, stirring until heated thoroughly.

6Can be frozen.
