- 6 tablespoons butter
- 1 tablespoon onion, minced
- 1/2 cup flour
- 3 cups chicken broth
- 2 cups wild rice, cooked
- 1/2 teaspoon salt
- 1 cup half-and-half
- 2 tablespoons dry sherry
- 1/3 cup ham, Minced
- 1/3 cup carrot, finely shredded
- 3 tablespoons slivered almonds
Directions

1Melt the butter in a saucepan, and saute the onions until they are tender.

2Blend in the flour.

3Slowly stir in the broth.

4Cook on med-high heat, stirring constantly until the mixture comes to a boil.

5Boil and stir for 1 minute.

6Add the wild rice, salt, ham, carrots and almonds.

7Simmer 5 minutes.

8Blend in the half and half and the sherry and heat.

9Serve Hot.
