- 4 cups chicken broth
- 13 cup uncooked wild rice
- 13 cup margarine
- 12 cup celery
- 14 cup chopped green pepper
- 14 cup chopped onion
- 1 carrot, shredded
- 1 teaspoon minced garlic
- 14 cup flour
- 18 teaspoon salt
- 18 teaspoon pepper
- 1 tablespoon chopped pimiento
- 34 cup half-and-half
- 2 tablespoons dry sherry
- 34 cup shredded cheese
Directions

1Rinse rice in cold water and drain.

2Combine rice and chicken broth in 2 quart saucepan.

3Cover and cook until tender (40 to 50 minutes).

4In another saucepan melt margarine and add celery, green pepper, onion, carrot and garlic.

5Cook until vegetables are tender (stirring occasionally) about 10 minutes.

6Add flour and cook another 2 minutes.

7Add broth, rice, salt, pepper, and pimentos and cheese.

8Bring to boil, stirring often.

9Stir in half and half and sherry.

10Heat through.
