Winter Beef Casserole

  • 400 grams diced beef
  • 500 grams baby potaoes quartered
  • 4 carrots
  • 1 parsnip
  • 1 turnip
  • 1 large onion
  • 500 ml vegatable stock
  • 1 clove garlic - crushed

Directions

    Pre heat oven to 160c or gas mark 2

    Add the beef to large oven proof dish
  3. 3
    Chop the vegetables and add these and the potatoes to the beef
  4. 4
    Pour on the vegatable stock and add the crushed garlic
  5. 5
    Gently stir together then cover with foil or dish lid if you have one
  6. 6
    Cook in oven for 2-3 hours, until beef is tender and falls apart.

    Serve as it is or with mashed potatoes or warm bread
