Winter Beef Casserole

- 400 grams diced beef
- 500 grams baby potaoes quartered
- 4 carrots
- 1 parsnip
- 1 turnip
- 1 large onion
- 500 ml vegatable stock
- 1 clove garlic - crushed
Directions

1Pre heat oven to 160c or gas mark 2

2Add the beef to large oven proof dish

3Chop the vegetables and add these and the potatoes to the beef

4Pour on the vegatable stock and add the crushed garlic

5Gently stir together then cover with foil or dish lid if you have one

6Cook in oven for 2-3 hours, until beef is tender and falls apart.

7Serve as it is or with mashed potatoes or warm bread
