Winter Beet Soup

Ingredients
- 2 tbsp butter
- 4 None beetroots, peeled and diced
- 2 None carrots, peeled and chopped
- 1 None medium potatoes, peeled and chopped
- 1 None onion, diced
- 1 litre vegetable stock
- 20 g piece horseradish, grated (1-2 tbsp hot horseradish sauce could be substituted)
- 1 tsp lemon juice
- 100 g creme fraiche
Directions

1Melt butter in a large saucepan, add beet, carrot, potato and onion and saute for 2-3 mins, stirring. Add stock, cover and simmer for 15-20 mins, until vegetables are soft.

2Meanwhile, mix horseradish, lemon juice and creme fraiche (or sour cream, if using) together, season then set aside.

3Blend soup then season. Distribute between 4 bowls then swirl in some of the horseradish cream. Serve.
