Winter Fruit Salad

Ingredients

  • 1 1/2 Tbsp. sugar
  • 2 1/4 tsp. flour
  • 1/4 tsp. dry mustard
  • 1/8 tsp. salt
  • dash of red pepper
  • 1 egg yolk, slightly beaten
  • 1/2 c. milk
  • 2 1/4 tsp. margarine
  • 1 Tbsp. vinegar
  • 4 Delicious apples, cored and chopped
  • 1 (8 oz.) can crushed pineapple, drained
  • 3/4 c. chopped pecans
  • lettuce leaves

Directions

    Combine the first 5 ingredients in top of double boiler. Stir in egg yolk and milk.

    Add margarine.

    Bring water to a boil. Reduce heat to low and cook until margarine is melted, stirring constantly.

    Gradually add vinegar.

    Cook, stirring constantly, until mixture is thickened and smooth.

    Cool completely.

    Combine apples, pineapple and pecans.

    Stir dressing into fruit. Refrigerate just until chilled.

    Serve on lettuce leaves.
