  • 3 slices hearty white bread, crusts removed
  • 1 cup milk
  • 1 egg
  • 1/2 onion
  • 1 teaspoon fresh thyme (1/2 tsp dried)
  • 1 tablespoon apple cider vinegar
  • 1 lb lean ground beef
  • 1/2 lb pork sausage, casings removed
  • 2 tablespoons fresh dill, chopped
  • 1 teaspoon salt
  • pepper, 3 grinds
  • 1 tablespoon tomato paste
  • 1 tablespoon honey
  • 1 teaspoon brown mustard
  • 1 pinch ground coriander (a fat pinch)

Directions

    Break the bread into a large bowl.

    In a blender or food processor, combine the milk, egg, onion, thyme, and vinegar.

    Pour over the bread and mix well. Allow enough time for the bread to soak up the milk.

    Add meats, dill, salt and pepper, mixing throughly.

    Pat the mixture into a loaf pan.

    Stir together the tomato paste, honey, mustard, and coriander. Spread over meat loaf.

    Bake at 350* for 1 hour.

    For a brown crust, turn on the broiler at the end of cooking.
