  • 2 carrots
  • 2 parsnips
  • 5 green beans broken into small pieces
  • 1 handful peas
  • 1 onion
  • 2 cloves garlic
  • celery root and stalk
  • 1/2 leek
  • 1 potato
  • 1/2 can corn
  • 1/4 bell pepper
  • salt

    I guess these are all the vegetables I put in the soup, and those simple seasonings. Start by chopping the vegetables and have them prepared. I had some of them in the freezer so I just throw them in the pot.

    Heat a teaspoon of olive oil in a pot. Add the onion and sweat it out. Add the garlic, season with salt and pepper and add the rest of the ingredients, along with the thyme, fresh or dry.

    Add as much water do you want and bring to a boil, and then turn down the heat to medium-low and let simmer nicely until all the vegetables are cooked through, and are nice and tender.
