- 1 (9-inch) pie shell
- 4 slices bacon
- 2 Tbsp. chopped onion
- 1 c. shredded Swiss cheese
- 3 beaten eggs
- 1 1/2 c. milk
- 1 c. mashed, cooked winter squash
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1/2 tsp. pepper
Directions

1Brown bacon and drain.

2Crumble and set aside.

3Reserve 1 tablespoon of bacon drippings.

4Cook onion in bacon drippings until tender.

5Sprinkle cheese, bacon and onion in the warm pastry shell.

6In a bowl, combine the eggs, milk, squash, salt, nutmeg and pepper.

7Pour in pie shell.

8Bake at 325° for 40 to 50 minutes.

9Let stand 10 minutes.

10Garnish with bacon crumbs.
