  • 1 1/2 cups sugar
  • 2 Tbsp. flour
  • 1 1/2 cups evaporated milk
  • 3 eggs
  • 1 stick butter
  • 1 tsp. vanilla
  • 3-4 bananas
  • 3/4 box vanilla wafers

    Mix sugar and flour in a saucepan. Separate eggs. Stir yolks with a fork till blended. Put pan on low heat and allow to cook till custard forms and thickens. Stir often. Remove from heat, add butter and allow to melt. Cool. Add vanilla. Stir a couple times while it cools. Line a pyrex 9 x 5 1/2 x 2 1/2 inch pan with 3 layers of vanilla wafers and 3 layered of bananas. Pour cool custard over wafers and bananas. Add a couple sprinkles of cream or tartar to egg whites. With electric mixer, beat till frothy. Continue beating and add 1/2 cup sugar and 1/2 tsp. vanilla. Spread on top. Bake at 375° in pre-heated oven till brown, 10-15 minutes.
