- 8 dried corn husks
- 4 Tbsp. olive oil
- handful small white onions, quartered
- 4 chiles (serranos), finely chopped
- 10 tomatilloes, husks removed and chopped
- 1/2 tsp. salt
- 4 lb. catfish fillets
Directions

1Soak corn husks in water for 1 hour.

2Rinse, drain and put aside.

3Heat olive oil in skillet, then add onions and saute 2 minutes.

4Add the chiles and tomatillos and cook for 3 minutes, stirring constantly.

5Add salt and set aside to cool.
