  • 8 dried corn husks
  • 4 Tbsp. olive oil
  • handful small white onions, quartered
  • 4 chiles (serranos), finely chopped
  • 10 tomatilloes, husks removed and chopped
  • 1/2 tsp. salt
  • 4 lb. catfish fillets

Directions

    Soak corn husks in water for 1 hour.

    Rinse, drain and put aside.

    Heat olive oil in skillet, then add onions and saute 2 minutes.

    Add the chiles and tomatillos and cook for 3 minutes, stirring constantly.

    Add salt and set aside to cool.
