- 1 head cauliflower
- 1 c. Fontinella cheese, grated
- 1/2 c. Cheddar cheese, grated
- 6 slices bacon, browned and drained
- 1/2 c. heavy whipping cream
- 2 sticks butter, melted
- 8 sheets filo dough
Directions

1Core cauliflower but do not break apart.

2Parboil whole hea d for 5 minutes.

3Leave head intact.

4Carefully remove from water and drain.

5Place head in round baking dish.

6Fill inside with cheeses and bacon.

7Pour heavy cream and 1 tablespoon melted butter over cauliflower.

8Arrange 1 sheet filo over cauliflower, tacking it around the head.

9Brush sheet of dough with butter. Place other sheets around head over each other brushing each with melted butter.

10Bake at 350° for 45 minutes.
