  • 6 sweet potatoes
  • 1 small can crushed pineapple
  • 1 bag coconut
  • 1 c. sugar
  • marshmallows

Directions

    Cook, drain and mash sweet potatoes.

    Add sugar and crushed pineapple which has been drained.
  3. 3
    Get large marshmallows and cover with the potato mixture.
  4. 4
    Roll them in coconut and place in buttered baking dish.
  5. 5
    Bake at 350° for 5 to 10 minutes until coconut is toasted and the marshmallows burst open.
