- 1 3/4 lb. yams
- 1/2 c. shortening
- 1 1/2 c. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1/4 c. sugar
Directions

1Boil potatoes until tender.

2Drain, remove skins and mash. Beat shortening into hot yams until blended.

3Cool.

4In a separate bowl, sift dry ingredients together.

5Add to yams and work together until well blended.

6Roll out 1/2-inch thick and cut with floured 2-inch cutter.

7Place slightly apart on ungreased baking sheet. Bake in preheated 450° oven for 15 to 18 minutes.

8(Bottoms will be very dark, but will not taste scorched.)
