Yam Biscuits

Ingredients

  • 1 3/4 lb. yams
  • 1/2 c. shortening
  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. sugar

Directions

    Boil potatoes until tender.

    Drain, remove skins and mash. Beat shortening into hot yams until blended.

    Cool.

    In a separate bowl, sift dry ingredients together.

    Add to yams and work together until well blended.

    Roll out 1/2-inch thick and cut with floured 2-inch cutter.

    Place slightly apart on ungreased baking sheet. Bake in preheated 450° oven for 15 to 18 minutes.

    (Bottoms will be very dark, but will not taste scorched.)
