- 1 lb. fresh yams
- 4 c. water
- 2 Tbsp. vegetable oil
- 1 c. chopped onion
- 2 c. chopped tomato
- 2 1/2 c. beef stock
- 1 tsp. salt
- 1/2 tsp. cayenne pepper
- sprig of parsley
Directions

1Boil yams in water until tender; remove from heat and drain. Peel immediately under cold running water.

2Place yams in a mixing bowl; mash with a potato masher until smooth.

3Set aside.
