Ingredients
- 2 1/4 pounds sweet potatoes, or yams peeled, cooked
- 13 cup sugar
- 13 cup brown sugar
- 1 each eggs
- 1 1/2 teaspoons orange zest grated
- 13 cup raisins, seedless
- 1 1/2 teaspoons nutmeg freshly grated
- 3/4 teaspoon salt
- 6 tablespoons butter or margarine
- 1 cup maple syrup
- 1 teaspoon lemon zest grated
- 2 tablespoons lemon juice
Directions

1Whip together yams, sugar, nutmeg, salt, butter, egg substitute and grated orange rind until smooth.

2Coat an 8 inch ring mold with melted butter.

3Put in freezer to harden butter.

4Then dredge mold with flour.

5Press the mixture into the mold.

6Bake at 375F (190C).

7for 30 minutes.

8Turn out on a plate and serve with Dixie Sauce.

9To make the sauce, mix together sauce ingredients and heat.

10Serve warm, drizzled over Yam Turnout.
