- 4 or 5 medium yams
- 1 c. pineapple juice
- 1/4 c. butter
- 1 egg, slightly beaten
- 1 tsp. salt
- 1/4 tsp. cinnamon
- 3 Tbsp. brown sugar
- 1/3 c. cream
Directions

1Peel yams; cut into large chunks.

2Place in saucepan; add fruit juice.

3Cook about 20 minutes or until tender.

4Mash yams well. Add butter, egg, salt, cinnamon, brown sugar and cream or juice, if needed.

5Spoon into well-greased baking dish.
