- 3 cups yams, peeled and cubed
- 1 tablespoon fresh lemon juice
- 1 tablespoon Italian parsley, freshly chopped
- salt
- fresh ground pepper
Directions

1Preheat oven to 375°F

2Place the yams in a covered baking dish with just enough water to coat the bottom of the pan.

3Bake for 45-50 minutes or until tender.

4Sprinkle the lemon juice and parsley over yams. Salt and pepper to taste.
