  • 3 cups yams, peeled and cubed
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Italian parsley, freshly chopped
  • salt
  • fresh ground pepper

    Place the yams in a covered baking dish with just enough water to coat the bottom of the pan.
