- 1 pkg. soup mix (onion, onion-mushroom or beef)
- 3 to 4 lb. boneless beef pot roast
- 1 (6 oz.) can tomato juice (3/4 c.)
- 1 small onion, peeled
- carrots, cut into chunks
Directions

1On a large sheet of heavy-duty foil or triple thickness of regular foil, sprinkle half package of soup mix.

2Place the meat on top and sprinkle remaining soup mix.

3Drizzle with tomato juice. Wrap foil tightly and bake at 325° for 2 hours.

4Open foil and arrange onion and carrots around meat.

5Rewrap and bake an additional hour or until vegetables are tender.

6Serve over steaming bed of egg noodles.
