Yeast Corn Bread

  • 1 c. milk
  • 6 Tbsp. sugar
  • 2 tsp. salt
  • 1/2 c. margarine (1 stick)
  • 1/2 c. warm water
  • 2 pkg. yeast (active dry or compressed)
  • 2 eggs, beaten
  • 3 1/2 c. unsifted flour
  • 1 3/4 c. yellow cornmeal

Directions

    Scald milk.

    Stir in sugar, salt and margarine.

    Cool to lukewarm.

    Measure warm water into large warm bowl.

    Sprinkle or crumble yeast.

    Stir until dissolved.

    Stir in lukewarm milk mixture, the beaten eggs, flour and cornmeal.

    Beat until well blended, about 2 minutes.

    Batter will be stiff.

    Turn into 2 greased 8-inch round cake pans or 2 greased 9 x 5 x 3-inch loaf pans.

    Cover, let rise in warm place free from draft until double in bulk, about 1 hour.

    Bake in moderate oven at 375° for 30 to 35 minutes.
