Yellow Rice

Ingredients

  • One 10 ounce package Vigo yellow rice
  • 4 tablespoons olive oil
  • 1 cup yellow onion, chopped
  • 6 cloves garlic, minced
  • 1 medium cubanelle pepper, chopped
  • Pinch of saffaron
  • 6 ounce can of sweat peas, drained
  • 1 cup fresh cilantro, chopped

Directions

    Cook rice per instructions on package, set aside

    Heat 2 tablespoons of olive oil over medium heat in a medium saucepan
  3. 3
    Add 4 cloves minced garlic - heat for 30 seconds, careful not to burn

    Add onion and pepper - saute for about 5 minutes, stirring occassionally
  5. 5
    Add saffaron, stir, remove from heat
  6. 6
    Add garlic, onion, pepper mix to fully cooked yellow rice

    Add peas, stir well

    Add cilantro and remaining 2 tablespoons of minced garlic

    Stir well and serve
