  • 1 1/2 tbsp. olive oil
  • 1/2 c. finely diced onion
  • 1 tsp. chopped garlic
  • 1 c. long grain converted rice
  • 2 c. low-sodium chicken stock
  • 1 tsp. ground turmeric or annatto (achiote)
  • 13 c. diced pimiento
  • 1/2 tsp. kosher salt

Directions

    In a large saucepan, heat olive oil over medium heat.

    Add onion and garlic; cook 3 minutes.

    Stir in rice and stir, 3 minutes.

    Add chicken stock and ground turmeric or annatto (achiote) and bring to a boil; cover, reduce heat to low, and cook 20 minutes.

    Stir in diced pimiento and salt; fluff with a fork.

    Remove from heat; leave covered.

    Fluff again before serving.
