- 1 1/2 tbsp. olive oil
- 1/2 c. finely diced onion
- 1 tsp. chopped garlic
- 1 c. long grain converted rice
- 2 c. low-sodium chicken stock
- 1 tsp. ground turmeric or annatto (achiote)
- 13 c. diced pimiento
- 1/2 tsp. kosher salt
Directions

1In a large saucepan, heat olive oil over medium heat.

2Add onion and garlic; cook 3 minutes.

3Stir in rice and stir, 3 minutes.

4Add chicken stock and ground turmeric or annatto (achiote) and bring to a boil; cover, reduce heat to low, and cook 20 minutes.

5Stir in diced pimiento and salt; fluff with a fork.

6Remove from heat; leave covered.

7Fluff again before serving.
