- 6 yellow squash
- 12 oz. Cheddar cheese, grated
- 4 eggs
- 1 chopped onion
- 1 c. evaporated milk
- 4 Tbsp. butter, melted
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions

1Use 2-quart casserole dish. Slice squash and steam until tender. Beat eggs and milk; add butter, salt, pepper and all but 1/2 cup of cheese. Next, add the squash and onion. Bake at 350° for 60 minutes or until knife inserted in center comes out clean. Sprinkle remaining cheese.
