  • 6 yellow squash
  • 12 oz. Cheddar cheese, grated
  • 4 eggs
  • 1 chopped onion
  • 1 c. evaporated milk
  • 4 Tbsp. butter, melted
  • 1/2 tsp. salt
  • 1/2 tsp. pepper

    Use 2-quart casserole dish. Slice squash and steam until tender. Beat eggs and milk; add butter, salt, pepper and all but 1/2 cup of cheese. Next, add the squash and onion. Bake at 350° for 60 minutes or until knife inserted in center comes out clean. Sprinkle remaining cheese.
