- 1 1/2 lb. yellow squash, sliced
- 1 can mushroom or cream of chicken soup
- 8 oz. plain yogurt
- 1 small jar chopped pimento
- 1 medium onion, chopped
- 4 oz. water chestnuts, sliced
- 2 c. herb bread stuffing mix
- 1/2 stick oleo
- salt to taste
Directions

1Cook squash tender-crisp; drain.

2Add next 5 ingredients; stir gently to combine.

3Melt butter; toss with stuffing mix.

4Reserve 1/2 cup.

5Press 1 1/2 cups mix on bottom of 2-quart casserole. Pour squash mixture over and sprinkle the reserved crumbs over. Bake 30 to 40 minutes in 350° oven until browned on top.
