- 2 lb. yellow squash, sliced
- 2 1/2 c. fine dry bread crumbs
- 1/2 c. minced onion
- 2 eggs
- 2 Tbsp. grated Parmesan cheese
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 c. cornmeal
Directions

1Cook squash in a small amount of water until tender, drain and mash.

2Add bread crumbs and next 5 ingredients.

3Add more bread crumbs if mixture is too soft.

4Shape mixture into small logs and roll in cornmeal.

5Deep fry in hot oil until golden brown.
