- 2 lb. yellow squash
- 1 c. butter
- 3 c. all-purpose flour
- 1 tsp. salt
- 2 eggs
- 1 1/2 c. sugar
- 1 Tbsp. plus 2 tsp. baking powder
Directions

1Squash should be cooked about 15 minutes.

2Mash squash into a pulp (some chunks are okay).

3Combine with eggs and butter.

4Stir well. Set aside. Combine rest of the ingredients.

5Add to squash mixture.

6Grease muffin tins and fill 3/4 full. Bake at 375° for 20 minutes or until picks come out clean.
