Yellow Squash Pie

  • pastry for double-crust 9-inch pie
  • 5 medium size yellow squash (approximately 2 c.)
  • 1/4 c. melted margarine
  • 3/4 c. sugar
  • 1 Tbsp. lemon extract
  • 1 Tbsp. all-purpose flour
  • 2 egg yolks, beaten (I use whole eggs)
  • dash of salt

Directions

    Cook squash.

    Drain well and mash.

    Combine all ingredients. Spoon in pie shell.

    Place strips on top, if desired.

    Bake at 375° for 30 to 35 minutes or until firm.
