- pastry for double-crust 9-inch pie
- 5 medium size yellow squash (approximately 2 c.)
- 1/4 c. melted margarine
- 3/4 c. sugar
- 1 Tbsp. lemon extract
- 1 Tbsp. all-purpose flour
- 2 egg yolks, beaten (I use whole eggs)
- dash of salt
Directions

1Cook squash.

2Drain well and mash.

3Combine all ingredients. Spoon in pie shell.

4Place strips on top, if desired.

5Bake at 375° for 30 to 35 minutes or until firm.
