- 3/4 lb. yellow squash (1 c. mashed)
- 1 egg, beaten
- 1/3 c. flour
- 1/3 c. meal
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 medium onion, grated
Directions

1Cook squash 10 to 15 minutes. Drain and mash 1 cup.

2Combine 1 cup mashed squash and egg.

3Stir well. Combine flour, meal, baking powder and salt.

4Stir. Add squash mixture and onion. Stir until blended.

5Drop squash mixture by level tablespoon into hot oil. Cook until golden brown, turning once. Drain on paper towel. Yields 2 dozen.
