Yellow Squash Souffle

Ingredients

  • 1 lb. yellow squash
  • 8 to 10 crackers
  • 1/4 c. butter
  • 2 eggs, separated
  • 1 large onion
  • 1 c. grated sharp cheese
  • 1/2 c. milk
  • salt and pepper to taste

Directions

    Cook squash and onion together until tender.

    Drain off water and mash until fine.

    Add salt, pepper, cheese, butter, egg yolks and crackers, crumbled fine.

    Beat egg whites until stiff and fold into mixture.

    Bake in buttered casserole dish until brown.

    Bake at 350° for about 30 minutes.
