- 1 lb. yellow squash
- 8 to 10 crackers
- 1/4 c. butter
- 2 eggs, separated
- 1 large onion
- 1 c. grated sharp cheese
- 1/2 c. milk
- salt and pepper to taste
Directions

1Cook squash and onion together until tender.

2Drain off water and mash until fine.

3Add salt, pepper, cheese, butter, egg yolks and crackers, crumbled fine.

4Beat egg whites until stiff and fold into mixture.

5Bake in buttered casserole dish until brown.

6Bake at 350° for about 30 minutes.
