Yellowtail 'Ryukyu' Rice Bowl

  • 250 grams Buri (yellow-tail, sashimi quality)
  • 2 Eggs
  • 2 tbsp Soy sauce
  • 2 tbsp Sake for cooking
  • 1/2 tsp Wasabi
  • 1 Ground sesame seeds
  • 1 add as much as you need Young green scallions

Directions

    Whisk the eggs well.

    Combine the sake to the soy sauce.

    Add the wasabi and mix well.

    Add the wasabi soy sauce to the beaten egg.

    Cut the fish into small cubes and put in the egg and seasoning mixture.

    Leave in the fridge for a while.

    Add a lot of chopped scallions and sesame seeds just before eating.

    Add some shiso leaves if you like.

    Transfer onto the hot rice and serve.

    You could also serve with a dollop of grated yamaimo yam.
