  • 1 (8 oz.) pkg. light process cream cheese product, softened
  • 2 (8 oz.) cartons vanilla low-fat yogurt
  • 1 tsp. lemon juice
  • 1/2 tsp. grated orange rind
  • 1/8 tsp. coconut extract
  • 1 (8 oz.) can unsweetened crushed pineapple, drained

    Beat cream cheese at medium speed of an electric mixer until light and fluffy.

    Add yogurt, lemon juice, orange rind and coconut extract.

    Beat until smooth.

    Stir in pineapple.

    Cover dip, and chill thoroughly.

    Yields 3 1/2 cups.
