Ingredients

  • 285 ml milk
  • 115 g plain flour (all-purpose)
  • 3 eggs
  • 1 pinch salt and white pepper
  • vegetables or sunflower oil

Directions

    Whisk together the egg, flour, milk and seasoning until absolutely smooth and set aside for at least ten minutes.

    Meanwhile, heat the oven to 250C Pour a little oil into each section of a muffin or cupcake tin (if making individual puds), so the bottom is covered a couple of millimetres deep.

    Place the tray in the oven and heat until the oil is super hot.

    Pour in enough batter to each hole to third-fill it, then place back in the oven immediately.

    Very important: do NOT open the oven door again while they are cooking!

    Cook for about 20 minutes, until crispy and puffy.
