  • 8 medium potatoes
  • 1 1/2 c. sour cream
  • 1 can cream of chicken soup
  • 1/4 c. melted margarine
  • 1/4 c. finely chopped onion
  • salt and pepper to taste
  • 1 1/2 c. grated cheese

Directions

    Boil potatoes in their skins in salted water.

    Let cool.

    Peel and shred into a greased 9 x 13-inch pan.

    Combine remaining ingredients and cover potatoes.

    Bake 30 minutes in a 350° oven. Sprinkle with 1/2 cup grated cheese and 1/2 cup crushed corn flakes.

    Bake 5 minutes more until cheese bubbles.
