- 1 12 lbs small tomatillos
- 2 medium onions, quartered
- 1 garlic, bulb use all cloves
- 5 serrano peppers, snap off stem
- garlic salt
- extra virgin olive oil
- 1 lime, juice of
- 1 bunch fresh cilantro
- salt
Directions

1Peel and wash tomatillos.

2Put whole tomatillos in a 13x9 dish, add onion, garlic cloves and peppers (whole).

3Drizzle EVOO over everything and season with garlic salt.

4Bake at 400 degrees for an hour.

5Let cool and put in blender.

6Add salt, juice from lime and cilantro to taste.
